These award-winning wines of “Le Fauve” are produced adjacent to the Mediterranean coast of Southern France. William-Harrison Imports is thrilled to be the sole U.S. importer to offer these extraordinary wines. These wines represent an excellent value for the category because they are produced with low yields in an ultra-modern winery with the most modern techniques. We buy these by the container in order to offer you significant savings. Unlike their California counterparts, the vineyard owners at “Le Fauve” did not go out and buy coastal property in the last decade or so to make inexpensive wine of high quality. The vineyard owners have owned their properties for generations, and are not compelled by large mortgage payments (or boat payments) to push the yields beyond the norm. Exceeding the normal yield for noble grape varieties gives the wine off flavors and a thin consistency. Imagine, would you prefer 4 tons of grapes per acre or 8 tons? Which would make better wine? The excellent weather, adherence to lower yields, and cool nights gives these wines a refreshing, full-flavored character and a reasonable price.
Clean, crisp varietal character with no oak for complexity is what this lovely Chardonnay from the south of France is all about.Made within sight of the Méditerranean Sea, it has pear, apple, mineral and light citrus notes on the nose and palate with round varietal fruit leading to a clean, balanced finish that is reminiscent of St. Veran or Pouilly Fuissé.
Technical specifications: The grapes were harvested at night, with a rigorous selection at the winery before chilling to 50° F. Skin contact for 4-8 hours before pneumatic pressing. Racking is done at 40 F to precipitate tartrates, then stored in stainless tanks at 50° F until bottling.
